Recipe: Pizza Pasta Salad

Pasta salad is a great way to use up some of the leftovers you have floating around your fridge and considering how easy it is to transport it can be a great addition to school (or work) lunches. I threw together some of my kids' favorite flavors in this easy pizza pasta salad and it was a serious hit at my house.

Ingredients
  • 1 box of whole grain pasta, cooked and cooled
  • ½ cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ cup of pepperoni, toasted and cut in quarters
  • ½ cup of olives, sliced
  • ¼ cup of diced onion
  • your favorite Italian dressing
Preparation
  1. Cook and cool your pasta.
  2. Mix in the cherry tomatoes, cucumber, pepperoni, olives, and onion.
  3. Mix in your favorite Italian salad dressing. I like Kraft Italian for this but you could easily make a homemade version if you prefer.
  4. Let this sit in the fridge for a few hours so the flavors can develop then serve cold.
