Sriracha Chicken with Roasted Veggie Salsa

Ingredients
  • 4 chicken breasts
  • 4 limes
  • 3 T Sriracha Sauce
  • 1 can of black beans (rinsed)
  • 1 can of sweet corn
  • 1 cup of cherry tomatoes
  • 2-3 bell peppers (I used green, red, and orange)
  • 2 T olive Oil
  • Salt and Pepper
Preparation
  1. Season chicken breasts with salt and pepper
  2. In a small bowl squeeze out the juice from 3 limes and mix together with sriracha sauce
  3. Put chicken breasts and sriracha mixture into a large freezer bag to marinade for 20 minutes
  4. While your chicken is marinading, Preheat your oven to 400
  5. Dice up your peppers and tomatoes and add to a medium bowl with corn and beans, mix together with olive oil
  6. Spread out salsa mixture on a cookie sheet and season with salt pepper and extra lime juice
  7. Roast for about 15-20 min
  8. Grill chicken until cooked through and top with Salsa
  9. Enjoy!
