Grilled Malibu Chicken with Coconut Rice
 
 
There aren't any specific measurements for this, because it depends how many people you are cooking for. I just did one chicken breast per person and bought regular sized packets of ham and cheese.

  • Chicken Breasts
  • deli ham
  • swiss cheese
  • honey mustard
  • brown rice
  • a can of coconut milk
  • a can of crushed pineapple or pineapple chunks
Preparation
  1. Marinate your chicken breasts in your favorite honey mustard for at least 30 minutes. I used about 3 T per chicken breast. ( a ziploc bag works the best for this.)
  2. While that is marinating start your rice. Follow the regular instructions for the amount of rice you have, but replace half the liquid with coconut milk.
  3. Throw your marinated chicken on the grill and sprinkle on some salt and pepper.
  4. Once your chicken is cooked through, top with a couple slices of honey ham and some swiss cheese.
  5. Optional:add some pineapple chunks to give it some extra zing.
  6. Top the rice with the chicken and you are done!
