Serves: 3-4 servings
Ingredients
  • Eggs
  • ½ Pound of Bacon
  • 1 Yellow onion diced
  • 2 Red Peppers diced
  • 2 C Diced Baby Red potatoes
  • Cajun Seasoning
Preparation
  1. Boil your potatoes until they are tender but still firm. They will finish cooking in the frying pan.
  2. In a large frying pan or skillet, cook bacon until evenly brown. Cut into small pieces and set aside.
  3. In the same pan, cook your potatoes for a few minutes, then add in your peppers and onions and cook until tender.
  4. Season to taste with Cajun seasoning and top each serving with a fried egg.
