Cajun Breakfast Hash

Serves: 3-4 servings
- Eggs
- ½ Pound of Bacon
- 1 Yellow onion diced
- 2 Red Peppers diced
- 2 C Diced Baby Red potatoes
- Cajun Seasoning
- Boil your potatoes until they are tender but still firm. They will finish cooking in the frying pan.
- In a large frying pan or skillet, cook bacon until evenly brown. Cut into small pieces and set aside.
- In the same pan, cook your potatoes for a few minutes, then add in your peppers and onions and cook until tender.
- Season to taste with Cajun seasoning and top each serving with a fried egg.
