I love quick and easy meals! Things get CRAZY at my house during the week and usually the last thing I want to do is cook dinner. This quick stovetop Picadillo is a fast twist on a classic Cuban dish and it's a great guilt-free dinner that everyone in my family loves!

Ingredients
2 pounds ground beef
1 large onion, diced
4 cloves of garlic, minced
2-3 bell peppers - I like a mix of colors in this so I usually use red, orange, and yellow
1 tomato, diced
can of tomato sauce (8 oz.)
2 tsp cumin
1 tsp garlic powder
1 tsp salt
2 bay leaves
½ tsp pepper
½ cup chopped cilantro (save some of this to garnish)
¼ cup of capers
½ cup olives
Preparation
Brown your hamburger and drain off some of the fat.
Add in your chopped onions, garlic, bell peppers and seasoning, and cook for a few minutes.
Stir in your diced tomato, tomato sauce, and cilantro.
Add in capers and olives (optional).
Let your meat mixture simmer on the stove for 10-15 minutes.
Serve over rice.
