-2 medium potatoes, peeled and chopped into small cubes
- ⅓ chopped red onions
- ⅓ chopped red bell pepper
- season with paprika.garlic powder,ground pepper, salt
- 4 eggs
Preparation
In a skillet add 1½ tablespoons of cooking oil, add the potatoes, and seasonings and cook on medium low heat for about 3 minutes.
Add 1 tablespoon of butter to the potatoes and mix well. Cook for about 15 to 20 minutes on medium low heat and add the onions and bell pepper in between.
Last step is to add the 4 whole eggs and scramble it with the potatoes.
You are ready to serve!
