Recipe type: Main
Cuisine: Chinese
Serves: 4-6
Ingredients
2 pounds of chicken, cut into small pieces
4 tablespoons of Worcestershire Sauce
3 teaspoon Salt
3 tablespoon White Sugar
8 Tablespoons Flour
2 Tablespoon Cornstarch
2 Tablespoon Olive Oil
1 ½ cup Brown Sugar
¾ Cup of White Wine Vinegar
1 ½ cups of Water
Cornstarch to Thicken
Preparation
Preheat the oven to 375 degrees.
In a small bowl mix the pieces of chicken with the 2 tablespoons of worcestershire sauce. Stir until the chicken has been coated.
In another bowl mix together the salt, white sugar, flour, and cornstarch. Transfer the chicken to the bowl with the dry ingredients and toss to coat.
In a medium frying pan heat the olive oil over medium-high heat. Add the chicken to the frying pan and fry until it is brown. Again, I love my Le Creuset enameled cast iron pan for this.
Freezer Meal - At this point, you could turn this into a freezer meal. Just freeze the cooked and cooled meat in a ziplock or food saver bag. When you are ready to serve it, make the sauce below, pour it over and cook. You can cook it from frozen like this but you may want to add a bit longer to your cooking time. It makes a fantastic freezer meal and hardly requires any prep work straight from the freezer.
To Make the Sauce
In a small pot bring the brown sugar, vinegar, and water to a boil.
Carefully scoop out a small portion of the liquid using a ladle and put it into a small bowl. Add 1-2 tablespoons of cornstarch to the bowl and mix with a fork until it has mostly dissolved.
Add the cornstarch mixture to the pot and let it boil until thickened. Repeat with additional cornstarch if the mixture does not thicken.
Place the cooked chicken into a small casserole dish and pour the liquid mixture over the chicken. This will thicken as it cooks so don't worry if it seems slightly thin.
Bake for 45 minutes. Serve over rice and with a vegetable or salad on the side.
Enjoy!
