My favorite way to do breakfast on busy mornings is to make them ahead of time. It’s one less thing we have to worry about when we are trying to get out the door and it makes our mornings go so much smoother.
These oatmeal muffins are really just individual servings of baked oatmeal and kids love them. You can customize these any way you’d like and they keep really well for about a week in the fridge.
I love that these are so easy to grab on the go. I make them ahead of time so my kids can take one or two when they head out the door to school in the morning. I send them with one in a Ziploc baggies or on a Viva paper towel (depending on how quickly they are going to be eating them) and they are all set for breakfast. These are so filling they keep them going until lunch too!

Baked Oatmeal Muffins Ingredients
- 5 cups rolled oats
- 1 large banana, mashed
- 1/2Â tsp salt
- 1/2 cup honey
- 1/3 cup applesauce
- 2 tsp vanilla
- 2 1/4 cups water
- 1/2 cup of mix-ins (nuts, chocolate chips, fresh fruit, seeds, raisins, dried cranberries, etc.)
Baked Oatmeal Muffins Instructions
Preheat the oven to 350°.
In the bowl of your mixer, combine all the ingredients.
Turn the mixer on low and mix until all ingredients are well combined.
Gently stir in any mix-ins. You can divide your oat mixture into several bowls to create several different flavor muffins out of one batch.
Bake for 20-25 minutes, or until baked through.
You’ll end up with the most amazing baked oatmeal muffins that are perfect for a quick breakfast on the go. We made chocolate chip, raspberry coconut, and blueberry chia seed. Yum!
