Cherry Coke Popsicles
Need a refreshing cold treat for your summer barbeque? These cherry coke popsicles are perfect! I may be a bit in love with Coca-Cola, so of course I had to make a popsicle version. Soda has an interesting but satisfying texture when frozen, and the fresh cherry mixture perfectly compliments the coke.
Homemade popsicles are so easy to make and it’s so much fun to play around with the ingredients and find the perfect flavor combination. For these, I mixed in fresh cherries and layered them with frozen coke to create the perfect flavor and texture combination!
Ingredients
Coca-Cola
2 C Fresh Cherries, pitted
1/3 C Sugar
1/2 C Water
Instructions
Pour a layer of coke into popsicle molds. The coke will expand when it freezes so pour a little less than you want. Freeze until solid.
Blend water, sugar, and cherries together until smooth. Pour a layer on top of the frozen coke. Put in popsicle sticks and push down a little into the frozen part so they stay in place. Freeze.
Pour in some coke for the final layer. Don’t fill them all the way to the top as the coke will expand again once frozen.
Make some Creamy Strawberry Flax popsicles for the kids and then sit down to enjoy a more grown up version after a summer barbecue!
