Chocolate Protein Balls for an On-the-Go Breakfast

I love mornings! Most of you are probably cringing right now. Sorry. I’m at my best in the mornings. On the flip side I’m always fading by late afternoon so I know I need to get as much done in the early part of my day as I can. I do not function well unless I start out the day with some healthy fuel though. I make it a priority to eat a healthy breakfast  with plenty of protein to get me going in the morning. These chocolate protein balls are loaded with protein and they are easy to grab on the go if you have a hectic morning!
I love keeping a batch of these in my fridge. They are great to have on hand when you need a quick breakfast or a healthy snack. These are a healthier variation of my family’s favorite chocolate peanut butter energy balls. This version has no added sugar is dairy free free and doesn’t use coconut (which I don’t mind but my oldest son hates).

Ingredients
- 2 cups rolled oats
- 1/2 cup peanut butter
- 1/4 cup chia seeds
- 1 banana
- 1/2 cup chopped pecans
- 1/4 cup honey
- 1 scoop Vega essentials shake (we used chocolate but you could easily use the vanilla to change things up a bit)
We used Vega Essentials to boost the protein in these. Vega Essentials is plant based, GMO free, and is made from whole food ingredients. I really try and get my nutrients from whole foods but honestly, my life is insane lately and I never seem to have time to spend the time in the kitchen that I need to. After looking at the ingredient list of Vega Essentials, I’m thrilled that they make it so easy to get the nutrients I need without adding in any ingredients that I’d rather avoid. Not only does Vega Essentials include 20 grams complete plant-based protein, it also has 3 servings greens (including spinach, broccoli, and kale), 16% of your daily fiber requirements, and 25% DV food-based vitamins and minerals. With all that, it’s still only 130 calories! I’ll definitely be keeping this on hand for busy mornings . . . and who am I kidding, every morning is busy around here.
I found Vega Essentials at my local Target near the pharmacy. They had several varieties and I’ll probably be back soon to try a few others because I’ve been so impressed with it. It tastes so good you’d never guess how many great things are in it!

Preparation
Soak your chia seeds in water for about 10 minutes to soften them up just a bit. Drain the excess water and add the chia seeds with all the other ingredients into your mixer.
Mix well. When all the ingredients are combined, form them into balls and roll them around with your hands to smooth them out.
Store these in the fridge. They should keep for 3-4 days, although they never last that long at my house. I like them with some sliced fruit for breakfast but they are great for packing in a lunch too.
