Hot Chicken Salad Sandwiches
If you are looking for a quick lunch idea, these hot chicken salad sandwiches hit the spot every time. They are so easy to make and are even great the second day! This family-friendly recipe is one that everyone will love.

I love chicken salad for a quick, protein-packed lunch. While a great cold chicken salad is always fantastic (try this Avocado Ranch Chicken Salad or this Classic Chicken Salad with Cashews), sometimes it is fun to change up lunch a bit. This hot chicken salad sandwich is one I’ve been making for years. it is so simple but the flavors are amazing and it is such a filling meal any time of the day.
I have several picky eaters in my family but even they love these chicken sandwiches. I like to throw together a huge batch then keep them in the fridge for several days to grab for quick lunches. Using a good crusty roll helps keep these from going soggy and you can reheat them before eating if you want them to taste just as good as they did fresh out of the oven.
These can definitely be eaten cold if you’d like as well, which makes them a great choice for packed school lunches. I still bake them beforehand because it helps crisp everything up and meld the flavors together. Wrap individual sandwiches in foil and have them ready to grab for any quick lunch on the go.
