Asian Noodle Salad
This Asian Noodle Salad is one of my favorite lunches to make. It feels like a splurge and it is absolutely guilt-free. This salad is packed with so many veggies and the dressing on this is so, so good.
My kids like to watch me make this salad because I end up trying to cram as many veggies into the bowl as I possibly can. Half my ingredients end up overflowing and spilling onto the counter . . . kind of like the way I make salads at a salad bar. I end up making salads that look like volcanos and it’s anyone’s guess how much I can add before everything starts spilling over the edge of my plate.

Any meal that I can cram full of veggies is a win in my book so I try and make this salad whenever I can. This is right up there with my quinoa and cheese stuffed peppers as one of my favorite healthy meals.
Ingredients
- 1 package of whole wheat linguine, cooked and cooled
- 1 cup shredded carrots
- 1 head Napa Cabbage, sliced in thin strips
- 1/2 head sliced purple cabbage
- 3 sliced bell peppers, multiple colors
- 2 big handfuls baby spinach
- 3-4 green onions, sliced
- 2 cucumbers, sliced
- Cilantro, chopped
- 1 cup cashews
- Juice of one lime
- 8 Tbsp. olive oil
- 8 Tbsp. soy sauce
- 2 Tbsp. sesame oil
- 3 Tbsp. brown sugar
- 2 Tbsp. grated ginger
- 4 garlic cloves, minced
- 1 jalapeno, diced
Preparation
Combine the last 8 ingredients together to make the salad dressing. Mix well. Toss in a handful of chopped cilantro if you’d like.
Combine all the other ingredients in a (very) large salad bowl.
Pour the salad dressing over the top and mix well.
