Recipe: Pizza Pasta Salad
Pasta salad is a great way to use up some of the leftovers you have floating around your fridge and considering how easy it is to transport it can be a great addition to school (or work) lunches.
I threw together some of my kids’ favorite flavors in this easy pizza pasta salad and it was a serious hit at my house.
Ingredients
- 1 box of whole grain pasta, cooked and cooled
- 1/2 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup of pepperoni, toasted and cut in quarters
- 1/2 cup of olives, sliced
- 1/4 cup of diced onion
- your favorite Italian dressing
Preparation
This salad can not be easier. Cook and cool your pasta then mix in the cherry tomatoes, cucumber, pepperoni, olives, and onion. Mix in your favorite Italian salad dressing. I like Kraft Italian for this but you could easily make a homemade version if you prefer.
Let this sit in the fridge for a few hours so the flavors can develop then serve cold.
