The Ultimate Breakfast Tacos (+ a secret sauce)

We are breakfast fans in my house. Most of the week it’s a quick and easy kind of deal because someone is always rushing out the door to go somewhere. On the weekends we like to go all out and turn breakfast into something that will nearly hold you over until dinner. These breakfast tacos are one of our favorites and they are somewhere in between our quick-grab-something-on-the-way-out-the-door breakfasts and our all-out Saturday morning spreads. They are loaded with flavor and so filling that most people can’t eat more than one. . . two at the very most.
These are not your typical breakfast tacos with sausage, eggs, and cheese. Those things are all there but that’s just the start of it. These breakfast tacos are loaded with hashbrowns, veggies, and topped with a secret sauce that ties the whole thing together.
We were in luck when we went to buy the ingredients to make this. Albertsons is having a Stock Up Sale right now on Pace (16 oz. varieties 2/$4).

I was able to restock my pantry so I’ll have plenty on hand the next time we want to make these breakfast tacos. The Stock Up Sale runs until October 13 so there’s still plenty of time to take advantage of it.
Ingredients
- Ground pork sausage, cooked
- Frozen hashbrowns
- Scrambled eggs
- 1/2 cup Pace Picante
- 1/2 plain Greek yogurt
- Shredded cheddar cheese
- hard or soft taco shells
- sliced tomatos
- avocado
Preparation
Cook your sausage, scrambled eggs (separately or together, it doesn’t really matter). In a frying pan, fry your frozen hash browns in just a bit of oil (I like coconut oil for this).
In a small bowl, combine your Greek yogurt and Pace Picante. This makes a nice, creamy sauce that is perfect for breakfast tacos. It adds a bit of kick without being too over the top first thing in the morning.
When everything is ready, you can assemble your tacos. In a hard or soft taco shell layer the hashbrowns, special sauce, sausage, and scrambled eggs. Top with shredded cheese, sliced tomatoes, and avocado.
These breakfast tacos are insane! They are packed with all your favorite breakfast foods and they are hearty enough that you won’t even be thinking about lunch again for hours. We try and serve these on those mornings when we know we are going to be extra busy and won’t have time for an early lunch.
