Black Bean Huevos Rancheros

Huevos Rancheros were not something I had the pleasure of discovering until my family moved to San Diego. Once we discovered the deliciousness that happens when you combine something as simple as eggs, salsa, and corn tortillas, there was no going back.
Huevos Rancheros, or “Ranch Eggs” are about as casual of a breakfast as you can get but they are so, sooo good.

Now that we have moved away from San Diego (we will always feel like native San Diegans at heart) we have to get our Huevos Rancheros fix at home. This recipe pulls in all our favorite Mexican flavors and adds some delicious S&W black beans for some extra protein.
I love adding beans to our meals whenever I can. They are such a great source of fiber and protein and they really add a great element to so many of my favorite recipes. Black Bean Huevos Rancheros Ingredients
- 1 can of S&W black beans
- 1 onion, diced
- 2-3 bell peppers, diced
- 1 jalapeño pepper
- 1 small jar of chipotle in adobo
- corn tortillas
- eggs
- salsa
- cilantro
- queso fresco
- Optional: Avocado
How to Make Black Bean Huevos Rancheros
In a large frying pan, sauté your diced onions and peppers (bell pepper, jalapeño, and chipped chipotle peppers) until they begin to soften.

Drain and rinse your can of S&W black beans and gently stir it into your pepper and onion mix. Stir in about 1/2 cup of your favorite salsa (more if you want to add a bit more kick, less if you don’t). Cook for a few minutes and set this aside.
Cook your egg sunny side up. If you want to make sure the egg white cooks completely, you can spoon a bit of hot oil over the top of the egg or place a lid over the top of your pan for a few minutes (just be careful not to leave it there for too long or the top of your yolk will cook).

Lightly fry your corn tortilla in just a bit of butter to soften it. On your plate, layer your cooked corn tortilla, bean mixture, and sunny side up egg. Top with chopped cilantro, salsa, queso fresco, and avocado.
This makes such an amazing meal anytime of the day. It’s such a fun twist on your standard breakfast and really takes things to a new level.
