Chicken Pasta Salad
This easy chicken pasta salad makes an amazing weekday lunch. This chicken salad is so much more filling than your typical salad and it is loaded with flavor. The combination of romaine lettuce and bow tie pasta makes this salad super filling and it is absolutely amazing.

Weekday lunches are the hardest part of meal prepping for me. I don’t have a lot of time to cook in the middle of the day so I need to either go with recipes that I can prep ahead of time or super simple things that I can throw together in just a few minutes.
This chicken pasta salad is both easy and/or can be prepped ahead of time. All you have to do to make it in advance is keep the bow tie pasta and croutons separate and toss them together just before serving.

I love having salad for lunch but what I don’t love is being hungry an hour later because it wasn’t filling enough. You won’t have that problem with this salad. It’s loaded with chicken and the addition of bow tie pasta makes it filling enough to hold you until dinner.

There are so many layers of flavor in this salad. Even my non-salad lovers enjoyed this one. I love all of the textures that you’ll find in this chicken salad and it makes such a great weekday lunch.

Chicken Pasta Salad

This chicken pasta salad is loaded with flavor and filling enough to keep you full until dinner. This makes the perfect healthy weekday lunch!
Ingredients
- 2 chicken breasts
- 1-2 heads romaine lettuce
- 2 cups bow tie pasta
- 1 cup shredded carrots
- 1 /2 cup cherry tomatoes
- 1/2 cup red cabbage, sliced thinly
- 1 cup of croutons
- Sweet Onion Salad Dressing
- Grill seasoning
Instructions
- Cook the bow tie pasta according to the directions on the box.
- Cut chicken into 1-2 inch pieces and pan fry with a bit of butter and grill seasoning.
- Chop the romaine lettuce, slice tomatoes in half, and thinly slice cabbage.
- Toss all ingredients together and serve immediately.
