Cranberry Apple Relish
I love cranberries, but am not a huge fan of most cranberry sauces, especially those taken straight from a can. This is more relish than sauce, texture-wise, which I find quite appealing. The textural elements come from chopped apples and walnuts as well as the whole cranberries, and the walnuts lend a subtle richness that takes it a step beyond plain old cranberry sauce. The super easy recipe makes enough for a good sized gathering of turkey diners but also fares well as leftovers spooned over muffins, waffles, toast, cake and ice cream as well as the more traditional turkey. It makes a gorgeous addition to any holiday table, so go grab a bag of cranberries and make yourself a batch.
Cranberry Apple Relish
Ingredients:
-12 oz bag of fresh cranberries
-2 sweet apples, peeled and diced
-1/2 cup apple juice or apple cider
-1/2 to 2/3 cup sugar, depending on taste
-2/3 cup chopped walnuts
Directions:
Combine cranberries, sugar and juice in a saucepan over medium heat and bring to a simmer, stirring occasionally. When berries are starting to burst and the liquids are thickening stir in the apples and walnuts. Cook for another five minutes, stirring a few times to combine and remove from heat. Chill before serving. This can be made a day or two in advance.
I don’t like cranberry relish or sauce, but my daughter made this and to be nice I tried a bite. Surprise, surprise — I liked it! Maybe it was having apple in it — I’m not sure what but it’s different from other cranberry dishes I’ve had. Did I mention that I don[t really like cranberries?!
