Creamy Broccoli Cheese Soup

There are very few things better for a weekday fall meal than a giant pot of soup. This Creamy Broccoli Cheese Soup is the ultimate comfort food and it is so easy to make. This soup recipe is equally perfect for entertaining or as a weeknight dinner. I love making this ahead of time then just heating it up when it is time for dinner. It takes so much off my plate when I’m tired at the end of the day.
Cream soups are some of my favorites but, unfortunately, I struggle a bit with dairy. I’ve tried substituting other ingredients in for the milk but it is just never the same.
For this creamy soup recipe, I used DairyPure Lactose Free Milk and I was so excited to discover that it tastes exactly like regular milk, just minus the lactose. This has a permanent place in my fridge now.Â

It was perfect in this Creamy Broccoli Cheese Soup. I used whole milk here as an alternative to straight cream. I find that whole milk still gives you amazing creaminess but it feels just a bit lighter, which is always a good thing.
Creamy Broccoli Cheese Soup Ingredients
- 3 Tbsp. butter
- 2 pounds fresh broccoli
- 1 large yellow onion
- 6 cups chicken stock
- 2 cups DairyPure Lactose Free Milk
- 4 Tbsp. flour
- 2 cups sharp cheddar cheese
- 1 tsp. garlic powder
- Salt, pepper
Creamy Broccoli Cheese Soup Preparation
This soup is honestly so easy to make. Chop your broccoli, separating the florets and the stems. You can use nearly all of the broccoli in this recipe. You can even throw in the leaves if you’d like.
Chop the onion.
In a large stockpot, add your butter, chopped onion, and chopped broccoli stems. Sauté for several minutes until the stems begin to soften and the onion starts to sweat a bit.
Add your 4 cups of chicken stock and bring to a simmer.
In a separate bowl, combine the 4 Tbsp. of flour with a small amount of milk to form a thick mixture. Add the flour mixture to your pot and stir will. Add in the rest of your milk and simmer until the soup
Add the garlic powder, and salt and pepper to taste. I like this soup a bit heavy on the pepper but you can season it however you’d like.
Stir in the broccoli florets and the shredded cheese and simmer for another few minutes.
Serve in a bread bowl, topped with a bit of extra cheese.
