We are often in a hurry in the mornings. We used to throw together grilled cheese sandwiches so we could eat them in the car. You don’t usually think of grilled cheese sandwiches as breakfast food but they are essentially cheese on toast and they are fantastically portable.
To make our breakfast grilled cheese sandwiches a bit more breakfast-like, we started throwing in a fried egg.
The results were delicious.
Suddenly we had a portable fried egg.
Egg grilled cheese is now one of our favorite quick meals, whether it is breakfast time or not. To take things really over the top, we use eggs from the happy egg co.
You can see just by looking at these eggs that they are something special. The yolk is so much darker on these eggs than your standard grocery store egg and the flavor is amazing.

Ingredients

- 1 large egg from the happy egg co.
- Shredded cheddar cheese
- 2 slices of buttered bread
- 2 slices of crispy bacon
- Chives, chopped
Preparation
Fry your egg in a bit of butter.
Remove it from the pan and place one butter slice of bread in the pan, buttered side down.
Sprinkle with shredded cheese. We find it melts a bit better than sliced cheese.

Top with your fried egg, chopped chives (use a pair of kitchen scissors to make this really easy), cooked bacon, more shredded cheese, and the other slice of buttered bread.
Cook for 3-5 minutes, on medium heat, on each side.

You’ll end up with an amazing sandwich that is not only packed with flavor but portable too! Make one of these and take it with you on the go or throw one together for a quick meal.
