Freshen up Dinnertime with Blue Apron

The holidays are over and it is time to start putting everything back in order. That means you also have to figure out what is for dinner.
Some days, that is the hardest problem to solve.
You run out of energy to go to the grocery store, you run out of time to plan things, and lately, I run out of ideas for things to cook that aren’t the same old thing.

Seared Chicken and Sage Gravy
The first recipe I made was a seared chicken and sage gravy. It sounded like the ultimate comfort food and it definitely did not disappoint. Blue Apron included everything, right down to the butter, milk, and flour. I didn’t have to worry about having any ingredients on hand at all, which is usually what stops my dinner making efforts in their tracks and sends me straight to the drive-through line.
I loved that the instructions were so clearly laid out. I’m very visual so when a recipe gets too wordy I tend to stop reading and just make up my own instructions . . . which can give me hit-or-miss results.
Blue Apron made is so easy, from dropping everything off at my front door to laying out the instructions so clearly. All I had to do was the fun part.
This first recipe was a total hit. It was absolute comfort food and perfect after a hectic day. I loved the recipe as a whole but the little details, like adding fried sage and chopped pecans to the chicken just took it over the top.
Seared Salmon with Spicy Beet and Millet Salad
I love salmon but I always seem to cook it the same way, which gets boring after a while.
I loved that this recipe gave me a new way to serve an old favorite. The spicy beet and millet salad surprised me because I’m not a huge beet fan but I really liked it and the flavors blended really well together.
This was topped with marinated orange slices and they absolutely made the dish for me. The whole thing just tasted so fresh and light, which was a great change from the heavy holiday foods I’ve been enjoying lately.
Spicy Cabbage Enchiladas
The third recipe we tried was Spicy Cabbage Enchiladas. I was pretty excited about this one because I love enchiladas but this was not a recipe that I would have thought of on my own. It was fun to change things up and experiment with some new flavors.
The produce that came with my box was so fresh. That was really apparent when I pulled out the ingredients for this recipe because the cabbage, even though I cooked it several days after my delivery arrived, was super fresh. Blue Apron gets their ingredients straight from the farmers so they are able to get higher quality and fresher ingredients than you are able to find at your local grocery store.
Seeing the quality of the ingredients made me so excited for a meal filled with beautifully fresh ingredients.
The recipe had me roast the cabbage and onions. I loved that it came with step by step photo instructions because that made it easy for me to skim through the instructions.
I didn’t have high hopes that my kids would eat this one. I was okay with that because, hey, more for me, right?
My older boys are pretty good eaters (and love any variation of enchiladas) but my youngest boy and little girls are a bit more particular.
I was really surprised at how big of a hit this was. My girls said it had salad in it so they were totally cool with the idea of cabbage enchiladas. My boys loved these so much they almost didn’t save me any.
It was fun trying something a bit different than our normal enchiladas (which we make frequently around here).
Blue Apron is such a great way to change up your dinner routine, especially after the chaos of the holidays. Cost-wise, they are about the same as going out for fast food but instead of an average burger you get high quality ingredients and innovative recipes that make dinner-time a pleasure.
I liked that they gave you the option to customize your menu for the week. We all have food preferences so it’s nice to create a menu that you know you will really love.
I tend to do a lot of quick-scratch cooking so most of our meals are things I can throw together quickly and, honestly, aren’t always very exciting but they get the job done. When you took shopping and planning out of the mix, I loved being able to focus my energy on creating some wonderful meals and learning some new tricks in the kitchen.
Blue Apron is perfect for those weeks when you there just aren’t enough hours in the day.
