Grilled Malibu Chicken
We’ve been grilling like crazy at my house and today I am going to share my latest favorite with you. I love meals like this because I am a pretty lazy cook and don’t like things that require a lot of prep. This meal has barely any prep time, which is great because when the weather is this nice who has time to make a fancy meal?
I have always loved Sizzler’s Malibu chicken but I wanted to make a healthier version so I decided to do a grilled version instead of breaded.
Ingredients
- Chicken Breasts
- deli ham
- swiss cheese
- honey mustard
- brown rice
- a can of coconut milk
- a can of crushed pineapple or pineapple chunks
Preparation
To start, marinate your chicken breasts in your favorite honey mustard for at least 30 minutes. I used about 3 T per chicken breast. Also, a ziploc bag works the best for this. While that is marinating I started on the rice. I followed the instructions for my rice cooker, but replaced half the amount of water needed with coconut milk. The same goes for if you are making this on the stovetop. After a while, my whole kitchen smelled fragrant and yummy from the coconut!
When your chicken is done marinating throw it on the grill and sprinkle on some salt and pepper. This time I decided to use my cast iron grill pan because I didn’t have time to get coals ready on our charcoal grill, but the pan does just as great a job. Just look at those sexy grill marks below! When your chicken is cooked through, top with a couple slices of honey ham and some swiss cheese.
Once my rice was cooked, I also added some crushed pineapple to give it some extra zing. Top the rice with chicken and you are done! This meal transported me to a happy island paradise and even your pickiest eaters should be pleased!

- While that is marinating start your rice. Follow the regular instructions for the amount of rice you have, but replace half the liquid with coconut milk.
- Throw your marinated chicken on the grill and sprinkle on some salt and pepper.
- Once your chicken is cooked through, top with a couple slices of honey ham and some swiss cheese.
- Optional:add some pineapple chunks to give it some extra zing.
- Top the rice with the chicken and you are done!
