Instant Pot Barbecue Chicken Tacos
It doesn’t get much better (or much easier than these Barbecue Chicken Tacos. These are the perfect option when you want to change up taco night a bit. With all your favorite BBQ flavors, these BBQ chicken tacos ? are an absolute crowd pleaser.
We are big on tacos at my house. Hardly a week goes by that we don’t have tacos in some shape or form. These Barbecue Chicken Tacos are a fun combination of two of our favorite foods and an easy and delicious option for weeknight meals.
This meal is so easy to throw together. I make the chicken in the Instant Pot so there’s very little prep work. I get my kids working to prep the toppings and we can get this on the table super fast, which is perfect on a busy weeknight.
The barbecue sauce really takes this recipe to the next level. I’d recommend either making homemade sauce or going with a storebought one that you love.
We love throwing this together when we want to change things up. These Barbecue Chicken Tacos were a huge hit with my kids and will definitely be making their appearance on our menu in the future.
Barbecue Chicken Tacos Ingredients
- 4-6 chicken breast
- Grill seasoning
- 1 red onion, sliced
- 1 cup of grape tomatoes, halved
- 1/2 pound of bacon, cooked and crumbled
- 1 bunch cilantro
- Smoked Gouda, shredded
- Your favorite barbecue sauce (or a homemade barbecue sauce like this one)
- 1 package of taco shells
Barbecue Chicken Tacos Preparation
Put the rack that came with your Instant Pot in the bottom of the pot. Pour in 1 cup of water and layer the chicken breasts on top of the rack. Sprinkle the chicken liberally with your favorite grill seasoning.
Seal the pot then push the “Poultry” button.
Once cooked, remove the chicken from the pot and shred it with two forks.
Grill the red onion slices in a pan with a bit of butter or oil for 4-6 minutes or until they begin to caramelize.
Arrange the toppings in a serving container. I was sent these cute taco dishes from Prepara. I love using them with the matching taco holders because they make them so much easier for kids to enjoy tacos.
Mix the grilled red onions with the shredded chicken and fill the taco shells.
Top with shredded gouda, sliced tomatoes, crumbled bacon, and cilantro and drizzle the top with your favorite barbecue sauce.
