My kids are a bit hit or miss when it comes to liking some of the less traditional recipes I try. A few of them are pretty adventurous eaters but some of them would happily eat burgers for every meal. They surprised me a bit with this recipe because they liked it so much that they even ate the serving I’d stashed away for myself as lunch the next day.
Since this meal is also extremely budget-friendly, I took that as a sign that I should be adding Lebanese Chicken Stew to our more regular meal rotation.

Lebanese Chicken Stew Ingredients
- 4 boneless skinless chicken thighs
- 4 garlic cloves, minced
- 2 tablespoons ground cumin
- 2 tablespoons tomato paste
- 3/4 teaspoon crushed red pepper flakes
- 2 bay leaves
- 2 15-ounce cans of chickpeas, rinsed & drained
- 1-2 red bell peppers, sliced
- 2 Tbsp lemon juice (half a lemon)
- Salt & Pepper
- flat-leaf parsley, chopped
- olive oil
Lebanese Chicken Stew Instructions

Combine all ingredients and add them to a crockpot. I love using our electric dutch oven to make this because it turns out amazingly well in that.
Add two cups of water and set the crockpot on low for 6-7 hours, until the chicken is done. Remove chicken from soup, shred, and return to pot. Add a cup or two of water as needed to reach the desired soup consistency, and taste for seasoning Adjust to your preference with salt, pepper, and lemon juice.
To finish, stir in chopped parsley just before serving and drizzle with olive oil.
