Lemon-Lime Witches Brew Poke Cupcakes

Halloween is just around the corner and this is one holiday that is all about the treats! These Lemon-Lime Witches Brew Poke Cupcakes taste delicious and they are so fun for kids to make. Lemon-Lime Witches Brew Poke Cupcake Ingredients
Cake:
- 1 box lime jello (4 oz)
- 1 cup hot water
- 1 box lemon cake mix
- 1/4 cup of water
- 1/3 cup vegetable oil
- 4 egg whites
Frosting:
- 1 package of cream cheese, 8 oz
- 1 stick salted butter
- 4-5 cups powdered sugar
- 2 tsp vanilla extract
- Green gel food coloring
Decorations:
- SweeTARTS Skulls and Bones
- SweeTARTS Ropes
- Sprinkles
- Candy eyeballs (if wanted)
Lemon-Lime Witches Brew Poke Cupcake Instructions
Preheat the oven to 350°.
Bake the lemon cake mix according to the instructions on the package.
Mix 1 cup of hot water with the jello mix and stir until dissolved. Set aside.
Remove cakes from the oven.
While still hot, poke the tops of the cupcakes with a fork. Be sure and poke at least 3-4 times on each cake. This is what is going to allow the jello mixture to seep into the cakes.
Very slowly, pour about a Tablespoon of jello mixture into each cake. If you pour too quickly, or don’t have enough holes in the top of your cakes, the jello mixture will run right off.
Place the cupcakes in the fridge to cool for about an hour.
To make the frosting, add your butter and cream cheese to a mixer. Mix on mid-high for 2-3 minutes until well combined.
Gradually add in the powdered sugar until you get the texture that you want.
Mix in the vanilla extract and gel food coloring.
