Protein Pumpkin Muffins

I LOVE the texture of these. They really have a soufflé-like texture thanks to all the eggs that are in the recipe. It makes them feel a bit less cake-like but they area also just absolutely delicious any time of the day.

Protein Pumpkin Muffin Ingredients
- 15 oz can of pumpkin puree
- 1 cup Clean Simple Eats protein pancake mix (or Kodiak Power Cakes Mix)
- 1 tsp vanilla extract
- 4 eggs
- 1/2 cup brown sugar
- 1 Tbsp cinnamon
- 2 scoops Clean Simple Eats Pumpkin Pie Protein Powder
Protein Pumpkin Muffins – Preparation

Add all ingredients to a bowl and mix until combined.
Lightly spray 12 muffin trays with cooking spray or line with muffin liners. Scoop mixture evenly into muffin tray and bake at 350 degrees for 20-25 minutes or until lightly brown on top.
Optional: Top with additional cinnamon.
