Recipe – Strawberry Coconut Pancake Stacks
We are a little bit obsessed with pancakes around my house. It’s our go-to breakfast when we feel like relaxing in the morning. I have a rule about pancakes though – they must be made with bananas in them. I make a few exceptions like our orange juice pancakes or apple filled pancakes, but as a general rule, banana pancakes are my first love . . . and they are generally made while singing the banana pancakes song (I’m making banana pancakes . . . ).
These Strawberry Coconut Pancake Stacks are a fun twist on the already perfect banana pancake and are a serious hit with the kids!
Ingredients
- Your favorite pancake recipe. Don’t have one? Try one of ours – Whole Wheat Buttermilk Pancakes or Blender Pancakes. I made things easy by using my favorite 10 grain pancake mix from Shelf Reliance.
- Coconut milk
- Coconut oil
- Sliced strawberries
- Optional: bananas or shaved coconut for mixing into your pancake batter
Preparation
Make your favorite pancake recipe but substitute coconut milk for the liquid. We mixed bananas into our pancake batter because that’s the standard around our house. This would also be tasty with flakes of coconut in the batter.
Beware when you are buying shredded coconut. Did you know the sweetened coconut you find at most grocery stores has some pretty nasty things in it? Look for unsweetened, preferably organic, coconut. The only thing listed on the ingredient list should be coconut. Bob’s Red Mill has some great unsweetened coconut  or I’ve also had great luck with the Let’s Do Organic brand.
Use coconut oil instead of oil or butter as you cook your pancakes. I always cook pancakes in coconut oil. The health benefits are fantastic and you just get a great, light flavor from the oil that is perfect on pancakes. You can get great deals on coconut oil on Amazon or they recently started carrying it in bulk at Costco for a great price.
Let your pancakes cool slightly and then stack them on a plate, alternating between a pancake and a layer of sliced strawberries. Top your pancake stack with some whipped cream or syrup and enjoy!
