Recipe: Tomato, Cucumber, and Chickpea Salad
I love throwing together a quick and light lunch on those days when you just don’t have time to, well, do anything. This easy tomato, cucumber, and chickpea salad can be made the night before and is a delicious way to recharge in the middle of the day. Serve this with a quick grilled cheese or piece of grilled chicken and you have a delicious and fast lunch.
Ingredients
- Ripe tomato, diced
- cucumber, diced
- 1 can of chickpeas, drained and rinsed
- 1/4 cup of diced red onion
- Balsamic vinegar
- olive oil
- salt and peper to taste
- Optional: top with feta cheese
Preparation
This salad is so easy to throw together. Mis the diced tomato, cucumber, and onion with the can of chickpeas that you have rinsed and drained. Gently stir them together.
In a separate bowl, mix together a simple balsamic vinaigrette (or use whatever your favorite homemade vinaigrette is). For this, I like to mix together 2 parts olive oil to 1 part balsamic vinaigrette with some salt and pepper.
Pour your balsamic vinaigrette dressing over your salad and let it sit for a few hours. This tastes best when the chickpeas have a chance to absorb some of the flavors of the dressing so it can even be made the night before to save time.
