Roasted Barbecue Chickpea Salad

Roasted Barbecue Chickpea Salad Ingredients
- 1 can S&W Garbanzo Beans
- 1 head of lettuce, chopped
- 4 slices of bacon, chopped
- 1/2 cup grape tomatoes
- 1/4 red onion, sliced thinly
- 1/2 cup corn
- 1 bell pepper, sliced
- 1 tsp. grill seasoning
- 1 tsp. olive oil
- 1/2 cup ranch dressing
- 1/4 cup barbecue sauce
Roasted Barbecue Chickpea Salad Instructions
To roast your Garbanzo beans, rinse them well then lay them on a paper towel to dry.
Season with the 1 tsp. of grill seasoning (whatever your favorite is) and 1 tsp. of olive oil. Toss to coat.
Roast in a 425° oven for about 40 minutes, tossing every 10 minutes or so.
While your Garbanzo beans are roasting, chop the rest of your veggies.
In a salad bowl, layer your lettuce, bacon, bell pepper, tomatoes, red onion and corn.
In a small bowl, combine the ranch dressing and barbecue sauce.
Top with the roasted chickpeas and drizzle with your barbecue ranch.
