Simple and Light White Bean Tuna Salad
This white bean tuna salads is one of my favorites when I want something light and flavorful.
I’ve been making a serious effort to make better food choices but that doesn’t mean I want to give up the flavors I love. This salad is packed with flavor and it tastes even better the next day so it’s a fantastic option when you want to make a big batch of something and eat it all week long.
I take this salad up a notch, in flavor and protein content by adding Bumble Bee® Solid White Albacore Tuna.

For this salad, you really only need a few ingredients. Most of them are even shelf-stable so it’s the perfect recipe to have up your sleeves when you haven’t had a chance to go to the store.
Ingredients
- 2 cans Bumble Bee® Solid White Albacore Tuna
- 1/2 jalapeño pepper, diced
- 1/2 red onion, diced
- 2 cans Great Northern beans, rinsed and drained
- 1 large handful parsley, chopped
- 1/4 cup sun dried tomatoes, chopped
For the dressing:
- 1/4 cup red wine vinegar
- 1/4 cup olive oil (or a combo of olive oil and some of the oil from your sun dried tomatoes)
- 1 tsp. dijon mustard
- 3 garlic cloves, minced
- salt and pepper
Preparation
Combine all the ingredients for the dressing and mix well.
Pour the dressing over the rinsed and drained beans and let them sit for 20 minutes. The beans will soak up a lot of the vinaigrette.
After some of the dressing has soaked up, add in your jalapeño pepper, sun dried tomatoes, red onion, and Bumble Bee® Solid White Albacore Tuna.
Stir gently. I like to leave the tuna in big pieces so this salad has a meatier feel.
Just before serving, stir in the parsley.
Enjoy right away or chill and eat the next day. This salad only gets better with time.
