Sloppy Joe Filled Corn Muffins

Dinnertime is crazy at my house. The only way I manage to get dinner on the table is to plan, plan, plan . . . and keep my fingers crossed that the twins will hang out in their high chairs long enough for me to cook. We are definitely in a quick and easy dinner phase at the moment!Â
These Sloppy Joe Corn Muffins can easily be made ahead of time and they are loaded with flavor! My entire family loved these (and that doesn’t happen with everything). We simplified this weeknight meal by using Manwich. I grew up on Manwich so it’s always fun for me when we cook with it.Â
Ingredients
- 4 eggs, separated
- 1 cup milk
- 1 tsp vanilla
- 3/4 cup butter, melted and cooled
- 2 cups white flour
- 1 1/2 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 pound hamburger (Manwich has no meat so you will need this!)
- 1/2 onion, diced
- 1 can Manwich® Original Sloppy Joe Sauce
Preparation
Brown your hamburger with the diced onion. Drain and add the can of Manwich. Set aside.
Combine the egg yolks, milk, vanilla, and melted butter (be sure and cool this first). In a separate bowl, combine the white flour, sugar, baking powder and salt. Add the dry ingredients to the wet ingredients until just mixed.Â
In a mixing bowl, beat the egg whites until stiff peaks form. Very gently fold your egg whites into your batter.Â
Fill lined muffin pans about 3/4 of the way full with batter. Top with about 2 tbsp. of meat mixture.Â
Bake at 350° for 15-20 minutes or until a toothpick comes out clean. Top with a small amount of cheese as soon as you remove them from the oven.Â
These make a tasty dinner on those nights when you have too much to do. Make them ahead and just reheat if you really want to save some time. My kids all loved these. By the time I set them loose the entire pan disappeared in about 5 minutes.Â
