Sloppy Joe Stuffed Peppers for a Quick Weeknight Meal

Weeknight meals can be so tricky. You need something quick and easy but also with a hint of comfort food goodness to get you through the rest of the week. These Sloppy Joe Stuffed Peppers made with Hunt’s Manwich are the perfect mid-week pick-me-up.

Did you grow up eating Manwich Sloppy Joes? I swear we had them once a week. They are serious comfort food. We always knew dinner was good when mom pulled out the can of Manwich. Now, as a mom, I love how easy it makes dinner, especially on those nights when I don’t have a lot of time.
I still love Sloppy Joes but I decided to change things up a bit with these Sloppy Joe Stuffed Peppers. My family loves Stuffed Peppers (I actually have one son who requests them as his birthday dinner each year) so these seemed like the perfect way to change up our standard Sloppy Joe night!
Sloppy Joe Stuffed Pepper Ingredients

- 3-5 large bell peppers
- 1 can of Manwich (any variety)
- 1 pound of ground beef
- 1/2 cup sharp cheese, cubed
- 1 onion, diced
How to Make Sloppy Joe Stuffed Peppers

These are so easy to make. I loved that I just had to spend a few minutes throwing them together and pop them in the oven and I had an awesome dinner ready to go.
Brown your ground beef then add a can of Manwich sloppy joe sauce. You can use any variety (Original, Bold, Thick & Chunky). We went with Bold because we wanted to take things up a notch.
Add your diced onion. I like to throw in some diced peppers too because I feel like it gives the dish some extra color but that’s totally optional.
Add some cheese cubes (we like extra sharp in these) and stir the mixture well.
Slice each pepper in half, clean out the seeds and membranes and fill it with your sloppy joe mixture.
Cover loosely with foil and bake at 350° for 40 minutes, or until the pepper is soft.
Top with fried onions and extra cheese if wanted and serve with a nice, big dinner salad.
