Slow Cooker Recipe – Spinach Artichoke Dip Chicken
If there’s one food I could probably live off of, it is spinach artichoke dip. It’s been my favorite since I was a teenager. I usually only make it when we have a party (mostly because I know I’ll eat all of it otherwise) so it’s a real treat when I make it.
This Spinach Artichoke Dip Chicken is super easy to make and turns your favorite dip recipe into a meal. It combines all my favorite flavors and cooking it in the slow cooker makes it really simple to throw together for a busy weeknight meal.
We ate this just as it is and everyone loved it. It would be wonderful served over french bread or mixed with pasta too though. We seriously thought about turning the leftovers into pasta but they were gone before I could experiment with them so I’ll have to try that next time.
Ingredients
- 6-8 chicken breasts
- 1 package of cream cheese (8 oz.)
- 1 1/2 cup spinach (frozen and thawed or fresh)
- 1/4 onion chopped or grated
- 1 jar of artichokes – We used a 30 oz jar of artichokes because they are my favorite but any size would work
- 1/4 cup sour cream
- 1/4 cup mayo – I used the Just Mayo. We are a bit obsessed with it (not sponsored at all we just love it)
- 1 cup shredded parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/2 T Salt
- 1 T white pepper
- 1 T garlic powder
Preparation
Combine all ingredients except sour cream and mayo in a slow cooker. Cook on high for 4 hours.
Remove lid and stir well. Add in the sour cream and mayo and cook for another hour until heated through.
Serve this with french bread and a side of any veggies you would normally dip in Spinach Artichoke Dip.
