Smothered Chicken Burritos with Minute® Rice
I don’t know anyone who has a lot of extra time during the holidays. Between the holiday parties, gift buying, decorating, and everything else we have on our plate, there isn’t a lot of extra time left over for getting dinner on the table. With all the sweet treats we enjoy during the holiday, sometimes I love having something a bit spicier for dinner to balance out all the sweetness and these smothered burritos made with Minute® Rice are quick, easy, and taste amazing. I was so excited when Minute® Rice offered to sponsor today’s recipe so I could share one of my favorite busy night meals.
These smothered chicken burritos are a staple at my house. We make them at least once a month and we especially love them during the holiday season because I can make a huge batch that we can eat for several days.

I love having quick and easy recipes up my sleeves during the busy holiday season. These smothered burritos are one of my family’s favorites and when I can cook Minute® Rice in only 5 minutes I can get them on the table in no time!
Smothered Burritos with Minute® Rice
Ingredients
- 2 cups of cooked Minute® Rice – I used brown rice but use whatever you like best.
- 1 can of enchilada sauce
- 1 can of green chilies
- 1 cup sour cream
- 2 chicken breasts, cooked and shredded
- flour tortillas
- 1 can refried beans
- shredded cheese
- 2 1/2 cups chicken broth
- 1 1/2 cup milk
- 3/4 cup flour
- 1 Tbsp. poultry seasoning
- 1/2 tsp. salt
- 1 tsp. pepper
- Optional: Cilantro and avocado as toppings
Preparation
Combine your chicken broth and 1/2 cup of the milk together in a saucepan and bring to a boil. In a separate bowl, the flour, remaining 1 cup of milk, poultry seasoning, salt, and pepper. Add your flour mixture to the chicken broth mixture and whisk over low heat. Cook for about 5-10 minutes, stirring frequently until it starts to thick up. This makes a homemade condensed chicken soup (if you are tight on time, just substitute 2 cans of cream of chicken soup).
To your soup mixture, add the green chilis, chicken, rice, and sour cream.
Top a flour tortilla with about 1/4 cup of burrito filling, refried beans, and a small handful of cheese. Roll and repeat until your pan is filled.
Top your pan of burritos with enchilada sauce and cheese.
Bake at 350° for about 30 minutes.
Top with cilantro, avocado, and a squeeze of lime juice.
These smothered chicken burritos are so easy to throw together and they are perfect for balancing out some of the sweetness of the holiday season. I don’t know what it is but I always crave something sweet after eating Mexican food so those holiday treats taste even better to me after serving these for dinner.
