Summer Cobb Salad – A Refreshing Twist on a Classic Salad

I can not get enough of fresh salads during the summer months and the classic cobb salad has always been one of my favorites. I thought it would be nice to lighten it up a bit by adding in some of my favorite summer veggies.
I’ve always heard that the cobb salad came about as a impromptu combination of leftovers when a hungry restaurant owner wanted to throw together a snack. The history is fitting because that’s how 99% of the salads are made in my house — chop up any veggies in the fridge, throw in some leftover chicken, mix it up and serve it up.
The end result is always perfection even if you never quite know what you are going to get before you start digging through the fridge.
Anything goes when it comes to salads.
The one place I do draw the line is my salad dressing.
There’s no faster way to ruin a salad than by using a dressing that isn’t as fresh as your salad. I like my veggies as fresh as I can get them and the same rule goes for my salad dressing and that means saying no to room temperature salad dressing.

Summer Cobb Salad Ingredients
- Iceberg lettuce, chopped
- Romaine lettuce, chopped
- Hard boiled eggs, chopped
- Grape Tomatoes, diced
- Bacon, cooked and chopped
- Avocado, diced
- Bleu cheese crumbles
- Corn, cut off the cobb
- Peas, thawed if using frozen
- bell peppers, diced

Summer Cobb Salad Preparation
Combine the chopped iceberg and Romaine lettuce and spread on the bottom of your salad bowl.
Top the lettuce mixture with all your chopped ingredients, layering them in rows across the top of your bed of lettuce.
Drizzle with Litehouse Homestyle Ranch. This adds so much creaminess to this salad that it really feels like a summer splurge instead of a salad that is packed with veggies.
