Ultimate Slow Cooker Chicken
This easy family dinner is full of flavor and takes almost no time to prepare. I love how tender meat cooked in a slow cooker is and it’s perfect for younger children who may struggle with tougher meat. This recipe is a great one to have up your sleeve an it’s easy to adapt to nearly any taste preferences.
Ingredients
- 1 lb chicken
- 1 can cream of chicken soup (if anyone knows how to make this from scratch please let me know. I’d love to be able to make a healthier version of this)
- 1 can of mushrooms or 1 container sliced fresh mushrooms (I like baby bella mushrooms in this)
- 1 lb of bacon, cooked
- Optional: green onions, sliced
Preparation
Early in the day, put chicken, cream of chicken soup, and mushrooms if using canned. Turn on high and cook for 6-8 hours until the meat is tender. I use frozen chicken for this when I’m strapped for time.
Optional: If you have the time, cook the bacon, remove it from the pan, then cook the chicken in the bacon grease for a few minutes on each side before adding it to the slow cooker. This is definitely not the low fat version of this recipe but the flavor is unbelievable.
Once the chicken is tender, add the mushrooms if using fresh, and top with swiss cheese and bacon. Put the lid back on the slow cooker and cook for another 10-15 minutes or until the cheese is melted. Top with sliced green onions if desired and serve.
