Whole Wheat Blender Waffles
Awhile back, I purchased a wheat grinder. I discovered I can get wheat kernels cheaper than buying wheat flour from the store, and freshly ground wheat tastes much better to me. I really believe that my wheat grinder has saved my family money. I know though, that many families cannot afford to purchase a grinder, but many of you probably have a blender at home. You can use your blender to make your waffle or pancake batter and still save money by using wheat kernels.
Whole Wheat Blender Pancakes
This weekend I was caught with no eggs or milk, but of course still had to cook breakfast if my family  and I wanted to eat. It just so happens that I keep powdered milk and powdered eggs in storage for just such an emergency. You can also save money by using powdered milk in your recipes, but if you do not have it or powdered eggs, then you can use regular milk and eggs. The important thing to remember about using your blender to grind wheat kernels is that you have to have a liquid in with the kernels or you will mess up your blender. There are some blenders specifically designed to grind wheat, but they are somewhat expensive. So, be warned, you will mess up your blender if you do not grind your wheat kernels with a liquid.
Whole Wheat Blender Waffles Recipe
1 cup Milk (I used 2 Tbs. Powdered Milk and 1 cup Water)
1 cup Wheat Kernels (whole and uncooked)
2 Eggs(I used 2 Tbs. Powdered Eggs and ÂĽ cup Water)
2 tsp. Baking Powder
½ tsp. Salt
ÂĽ cup Oil (I used Canola)
2 Tbs. Sugar
Put milk and wheat kernels in blender and blend on highest speed for about 4 minutes or until batter is smooth. Add eggs, oil, baking powder, salt, and sugar to the batter. Blend on low until batter is mixed. Pour batter from blender jar into prepared waffle iron. (This is nice because all you have to clean is the blender jar.) Cook until ready. Sometimes these will take longer than regular pancakes so make sure you check them.
I made 8 waffles in my waffle iron, but this will vary with your type of waffle iron because they come in different sizes.
Note: You can also make these in a pan on your stove as pancakes.
Syrup for Waffles
You can also save money by making your own syrup for your waffles. There have been times that I did not have any syrup on hand but had the ingredients to make it homemade. Here is  one recipe that my family enjoys.
Homemade Pancake Syrup Recipe
4 cups White Sugar
½ cup Brown Sugar
2 cups Water
2 teaspoons maple flavoring or vanilla flavoring
Mix the water and sugars in the pot and simmer for 15 minutes. Remove from heat and stir in flavoring. Cool and pour into a container. This does not need to be refrigerated.
