5 Minute Breakfast Pie
Breakfast is a bit of circus around my house. My kids can clean out a box of cereal and be starving 5 minutes later so we save cereal for a special treat. We try and make things that are a bit more filling and more affordable than cereal since we got through so much of it with 6 kids. This easy 5 minute breakfast pie is perfect to busy mornings and a great way to fill kids up before a hectic day.
This recipe is so easy that my older boys will often throw it together for me. You can easily tweak this recipe and throw in whatever you have on hand (or whatever you know your kids will eat) so it’s an easy crowd pleaser.
Ingredients
- 1 1/2 cup frozen hashbrowns, thawed
- 3 eggs
- 1 cup milk
- 1 cup toppings (bacon, sausage, ham, green onions, peppers, etc.)
- 1 cup shredded cheese
- 1 tsp seasoned salt
Preparation
Press the thawed hash brown shreds into the bottom of a pie pan to make a pie crust. In a separate bowl, beat the eggs and milk together. Add in the shredded cheese, toppings, shredded cheese, and season salt. Pour the egg mixture into the crust.
Bake at 375° for 35-30 minutes. It should be fairly firm when you take it out of the oven but will set up a bit more as it cools.
Top with sour cream, salsa, and avocado if you want to give your breakfast a Mexican twist.
