5 Summer Salads You Will Crave
I love, love, LOVE summer produce. The farmer’s market is my happy place. One a hot day, there are few things that are more refreshing that a big salad filled with fruits and veggies.
I also tend to think that it’s no coincidence that bathing suit season coincides with salad season. I’m hoping that by filling my menu plan with crave-able salads I’ll be able to finally fit into my pre-baby clothes, because THAT is happening this year.
My kids have grown up eating salad so, as a result they are pretty fearless eaters. If you do have a picky eater on your hands though, I’ve found that filling a salad with fresh fruit will usually get them over at least some of their fears.
These summer salads are perfect for a simple and refreshing lunch or if you are hosting a summer get together. They are some of our favorites and I’m sure that you’ll love them too.
Simple Spinach Salad
I love spinach salad in all forms but this simple salad recipe is one of my favorites. The mushrooms marinate beautifully in the dressing and the combination of the swiss cheese, bacon, and mushrooms is just delicious. You’ll want to lick your bowl when you are finished with this salad.
Strawberry, Date, and Apple Salad
I love fruit in my salad, especially when I need to convince my kids to eat some extra veggies. Fresh summer produce combines beautifully in this strawberry, date, and apple salad. A simple balsamic vinaigrette makes this salad the perfect meal on a hot summer day.
Easy Broccoli and Cauliflower Salad
This easy Broccoli and Cauliflower Salad is my go-to recipe for summer potlucks. This is not one of your lowest fat options for salads but it’s a serious kid pleaser and the flavor combination is amazing. This can be made ahead of time and keeps in the fridge for several days, which is perfect if you want to cut down on your kitchen prep time.
Blueberry Date Salad
I’m a big fan of dates in just about anything and salads are no exception. Dates add a wonderful sweetness to salad and combines well with any combination of fruit. This blueberry date salad brings together some of my favorite flavors and is a frequent visitor at our dinner table.
Cheeseburger Salad
We do a lot of grilling over the summer. That results in a lot of leftovers that we have to do something with the next day. For an easy lunch, we make cheeseburger salads! Throw a leftover grilled hamburger, cut into slices, on top of a veggie packed salad and you have a lunch even the meat lovers in your house will enjoy.
