Avocado Ranch Chicken Salad
I could eat Avocados all day long and they are fantastic in this Avocado Ranch Chicken Salad. This fun twist on a classic chicken salad is perfect for a light lunch or a quick snack any time of day. I love that this is so quick and easy to throw together, thanks to my Instant Pot, and it is packed full of flavor.
I love chicken salad! While I can always go for a classic chicken salad like this one, I also love to change things up. This chicken salad is loaded with all of my favorite things.
To save time, I cook the chicken in my Instant Pot. My Instant Pot is my biggest time-saver in the kitchen. Nothing else lets me turn frozen chicken into tender shredded chicken in under 20 minutes flat.
Avocado Ranch Chicken Salad Ingredients
- 4-6 chicken breasts
- 1 package of dry Ranch mix
- 1 cup of chicken broth
- 2 avocados, diced
- 3/4 cup mayo – I love this Avocado Mayo. It adds so much flavor to everything.
- 1/2 cup bacon, cooked and chopped
- 1/2 cup cheese, shredded
Avocado Ranch Chicken Salad Preparation
Put your chicken breasts in the Instant Pot. My Instant Pot saves me so much time in the kitchen. I use it at least once a day and cooking chicken it is one of my favorite ways to use it.
Use the rack that comes with your pot to get the chicken off the bottom of the pot.
Pour the chicken broth in the bottom of the pot and sprinkle the chicken with the powdered ranch mix.
Seal the pot and push the “poultry” setting to cook the chicken.
Remove the chicken from the Instant Pot and shred it.
In a large bowl, combine the chicken, mayo, shredded cheese, and chopped bacon.
Gently stir in the chopped avocado.
Serve with crackers for dipping, on a sandwich, or eat on its own. This is delicious any time of the day.
If you aren’t planning on serving this right away, leave out the avocado until just before you are ready to eat.
