Cajun Breakfast Hash
I am all about breakfast food lately. We usually keep it pretty simple around here but on Saturdays my family loves cooking a big breakfast together in our pjs.  This Cajun Breakfast Hash is delicious and really filling to sustain you for most of the day.  It only uses a few ingredients so it is cheap to make but packs in a ton of flavor.
Cajun seasoning is the greatest, seriously. I put it on everything. My mouth is watering writing this post. I may need to make this for dinner…
To make it you will need:
- Eggs
- 1/2 Pound of Bacon
- 1 Yellow onion diced
- 2 Red Peppers diced
- 2 C Diced Baby Red potatoes
- Cajun Seasoning
Boil your potatoes until they are tender but still firm. They will finish cooking in the frying pan.
In a large frying pan or skillet, cook bacon until evenly brown. Cut into small pieces and set aside.
In the same pan, cook your potatoes for a few minutes, then add in your peppers and onions and cook until tender.
Season to taste with Cajun seasoning and top each serving with a fried egg. This recipe feeds about 3-4 people
