Cheese and Potato Casserole
Are you tired of baked potatoes, fried potatoes and rice? If so, try this delicious rich, creamy potato and cheese casserole the whole family will like. The cheese potato casserole goes very well with beef, pork, or chicken.
It takes just a few minutes to put the casserole together, but it does take about an hour to cook in the oven. You do not have to even peel the potatoes if your family likes potato skins. Potatoes are a good source of vitamins and minerals and taste good too.
Ingredients
6 medium potatoes, scrubbed but not peeled, and thinly sliced
1/4 tsp. salt
1/8 tsp. pepper
1 1/2 cups grated cheddar cheese
1 can condensed cream of mushroom soup
3 tablespoons butter or margarine
3/4 cup milk
1/2 onion, thinly sliced
oil or oil spray for greasing casserole dish
Preparation
Make the following layers in a greased 2-qt. casserole:
Take half of the potato slices and put on the bottom of the casserole dish. Layer the onions over the potatoes. Take one-half of the seasoning and sprinkle over the potatoes. Add one-half cup of the grated cheese over the seasoning. Add one-half of the soup over the cheese. Dot the soup with half of the butter.
Make second layer of potatoes, seasonings and soup just like you did the first layer. Dot the soup with the remaining butter.
Fill the empty soup can with milk and pour over top of casserole.
Cover and bake in moderate oven (350 degrees) for one hour, or until potatoes are tender.
Carefully remove the cover and sprinkle the remaining one-half cup of grated cheese over the top. Return the casserole to the oven uncovered until the cheese melts.
Return to oven just until cheese is melted.
Makes 6 to 8 servings.
Tips
1. Spray or grease the Pyrex Bakeware 2-Quart Casserole Dish with Lid well so the casserole does not stick to the dish.
2. If your family does not care for onions you can omit them, or you can finely dice them.
3. Warm up the cheese and potato casserole in the microwave, or in the oven at 300 degrees, for a half an hour or until bubbly.
4. Potatoes should be stored in a cool, dark, ventilated place. If stored properly the potatoes should last six months.
