Cheesy Chicken and Rice Casserole
If you are looking for the ultimate comfort food recipe, it doesn’t get much better than chicken and rice. This cheesy chicken rice bake is the perfect chicken and rice recipe for a weeknight meal!
I’ve tried a lot of different versions of chicken and rice and this super cheesy chicken rice bake is one of my favorites. It’s made with all whole ingredients so it’s healthier than many of the other versions that I’ve tried and it’s so creamy and decadent that it definitely satisfies that need for comfort food.
Chicken and Rice Recipe Ingredients
- 4 Tbsp. Butter
- 4 cloves garlic, minced
- 1/4 cup diced onion
- 2-3 cups baked and shredded chicken breast
- 4 cups rice, cooked
- 1/4 cup flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp poultry seasoning
- 2 cups chicken broth
- 2 cups shredded cheese
Preparation
Season your chicken breasts liberally with poultry season (or any other seasoning you’d like) and bake until cooked through. Let the chicken sit for a few minutes then shred with two forks.
Melt the butter in a saucepan and add minced garlic and diced onion.
Stir in the flour, salt, pepper, and poultry seasoning. Cook for a few minutes then slowly stir in the chicken broth.
Stir continuously until the mixture begins to thicken up then add the rice, chicken, and cheese.
Transfer to a 9×13 inch baking dish and top with extra cheese.
Bake at 350° for 30 minutes.
