Chicken Fajita Quesadillas with Avocado Ranch
Quesadillas are a lunchtime staple at my house. They make an appearance at least once a week but because we are always changing up the ingredients they never get old. These Chicken Fajita Quesadillas with Avocado Ranch are my all-time favorite quesadillas and they are made even easier with Foster Farms Refrigerated Grilled Chicken Strips so I was thrilled when they wanted to sponsor this post.
Quesadillas can be thrown together so much faster if you have a few ingredients prepped beforehand. I don’t usually have time for the prep work but Foster Farms refrigerated grilled chicken strips let me cheat a bit. They are ready to eat and add some high-quality protein to quesadillas and other quick meals. I love that they have no added hormones or steroids and they are great to have on hand. You can find them at Walmart in California, Oregon, Washington, Arizona and Nevada.
Ingredients
- Foster Farms Refrigerated Grilled Chicken Breast Strips
- Bell peppers, sliced
- Onion, sliced
- Flour tortillas
- Cheese, shredded
- 1 Avocado
- Âľ cup Prepared ranch
Preparation
Scoop the avocado out of the skin and add it to a blender or food processor with the ranch. Blend for about 30 seconds until it gets nice and smooth.
Toss your sliced peppers and onions into a frying pan and cook on medium for 3-5 minutes until they begin to soften. Add the Foster Farms refrigerated grilled chicken strips to the pan to heat through.
Remove the veggies and chicken from the pan and throw in a tortilla. Top it with cheese, add the pepper/onion/chicken mixture, top with a bit more cheese and another tortilla and let it cook for 2-3 minutes.
When the bottom tortilla starts to look toasted, flip the quesadilla over and cook the other side for 2-3 minutes.
Remove from the pan and cut it into slices.
You’re left with an ooey gooey quesadilla with a nice crunch from the veggies. Dip this quesadilla in the avocado ranch for an added layer of flavor.
