Grilled Chicken Mashed Potato Bowls with Creamy BBQ Sauce

I’m at a stage of life that is particularly stressful. I have 6 kids I’m trying to keep alive raise and I very rarely have any down time. It’s turned me into a bit of a stress eater so I’m always looking for great comfort food recipes that will help me get dinner on the table and satisfy my need for satisfying. These grilled chicken mashed potato bowls are my take on the fast-food version but mine is loaded with veggies and topped with a creamy, cheese BBQ sauce that is to die for!
Ingredients
- 1 pound Foster Farms chicken thighs
- Stubb’s chicken spice rub
- 6-8 russet potatoes, cooked and mashed
- corn, fresh or frozen will work
- 2 bell peppers
- 1 onion
- 1 Tbsp butter
- 1 Tbsp flour
- 1 cup of milk
- 1/2 cup shredded sharp white cheddar cheese
- 3/4 cup Stubbs BBQ sauce
Instructions
I like to start my BBQ chicken early so it can pick up as much flavor as possible. The night before, liberally sprinkle your chicken with Stubb’s chicken spice rub. I like to use dark meat chicken for this. It’s often more affordable and it has a much richer flavor. If you haven’t cooked with dark meat in a while, definitely give it a try.
I used Stubb’s BBQ sauce. I found it in the condiments aisle at my local Ralph’s. We’ve tried several of their sauces in the past and always been really happy with them.
We found a great little picnic pack of Foster Farms chicken that included thighs and drumsticks. I used the thighs for this recipe but I seasoned the drumsticks right along with the rest of the chicken and served that for my picky eaters who don’t like their food mixed together so it worked out great. We love Foster Farms chicken because it is locally raised in California and always 100% natural.
Look for an IRC (Instant Redeemable Coupon) that can be found in-store (good through 12/31/15) for the chicken and BBQ sauce to save some money.
Peel your potatoes, slice them in half so they will cook faster and add them to a pot of water. Bring your water to a boil and cook until your potatoes are soft.
Mash your potatoes with some butter and milk to get them nice and creamy.
Meanwhile, slice your peppers and onions and cook them with a bit of coconut oil for 3-4 minutes. Cook your corn and set it aside.
In a small saucepan, melt your 2 Tbsp of butter. Add in 2 Tbsp. of flour and cook for a few minutes to get rid of the raw flour taste. Add 1 cup of milk and stir slowly as it cooks for another 3-4 minutes. Add in 1/2 cup shredded sharp white cheese and 3/4 cup of Stubbs BBQ sauce. You can add more or less sauce if you’d like. This sauce tastes amazing either way.
Grill your chicken on the grill for 4-7 minutes (this will vary based on the size of your chicken). I like to grill my chicken with just the dry rub on then add sauce afterwards.
Let your chicken sit for a few minutes after grilling then hand shred it and mix it with some of your creamy BBQ sauce.
Now you are ready to put your mashed potato bowls together. Fill a bowl with mashed potatoes and top with your chicken, peppers and onions, corn, and a little extra sauce if you’d like. These are the ultimate comfort food!
