Homemade Strawberry “Fried” Ice Cream

With school back in session, it’s even more important to find time to spend together as a family. Some weeks it feels like the only time I get with my kids is running them back and forth from one activity to the next. One of our favorite things to do together is have a family game night — and for us, that means hanging out and playing games on our Nintendo Switch while enjoying a few special treats. This Homemade Strawberry “Fried” Ice Cream is a new favorite and one that reminds us of a treat at our favorite Mexican restaurant. The good news is, this is super easy to make so even your kids can help!
As a mom of 6, I know that if I have food, my kids will happily join in on family game night. Food is absolutely the way to their hearts. We try and change up our treats so that there’s always something new and exciting to enjoy. This week, I thought it would be fun to make our own homemade version of “fried” ice cream. Fried ice cream is always a favorite when we go out to eat. This one isn’t complicated to make and uses toasted cereal as the “fried” portion.
You can go for a more traditional version by adding some cinnamon to the ice cream. We wanted to change things up so we made ours strawberry flavored by using Honey Bunches of Oats with Strawberries and sliced fresh strawberries. We decided to use Honey Bunches of Oats because it a great combination of crispy and sweet flakes, with crunchy clusters and a touch of honey. It’s a cereal that tastes great because of the mix of flavors it has. I just knew that it would add flavor and crunch to our Homemade Strawberry “Fried” Ice Cream!
I like to make this earlier in the day so we have it ready to go for a family game night. My kids love sitting down together and showing us all the cool things they’ve learned to do on their favorite games. I’ve learned that paying attention and showing interest in the things my kids enjoy means so much to them.

My boys are getting older so finding things they want to do together as a family has been a bit more challenging. They really love games though so we’ve gotten a lot of use out of our Nintendo Switch.
When you add this Homemade Strawberry “Fried” Ice Cream to the mix, you have the makings of a fantastic night together as a family.
Ingredients
- Honey Bunches of Oats with Strawberries
- 4 Tbsp. butter
- Vanilla ice cream
- Fresh strawberries, sliced
- Optional: chocolate sauce and whipped cream
Instructions
Pull out your ice cream and let it soften for about 20 minutes. You want it soft enough that you can easily work with it.
In a large frying pan, add your butter, let it melt on medium heat, then add about 1/3 of the box of Honey Bunches of Oats with Strawberries.
Before the frying pan gets too hot, gently crush the cereal with the bottom of a cup. You don’t have to completely crush it, leave plenty of big pieces, just crush it until some of the larger pieces are broken up.
Fry your Honey Bunches of Oats with Strawberries for about 3-4 minutes, or until they are nicely coated in the butter and lightly fried.
Spray a 9 x 13 inch casserole dish and pour half the toasted cereal into the bottom. Use the cup to flatten the cereal into one, even layer.
Once your ice cream has softened, add it to your mixer and mix on medium speed for about 3 minutes, or until it is nice and smooth.
Gently spread half of your ice cream on top of the layer of Honey Bunches of Oats and carefully smooth it over.
Layer with your sliced strawberries then top with the rest of the ice cream.
Pour the remaining cereal on top, and push down so the top layer is even and mostly pushed into the ice cream layer.
Cover with plastic wrap and freezer for 4-5 hours. Cut into squares and serve with a bit of whipped cream and chocolate sauce.
