Homemade Strawberry Vinaigrette Salad Dressing
I love fruit filled salads topped with strawberry vinaigrette. I’ve never been able to find a store-bought strawberry vinaigrette that I liked though so I made my own and it’s surprisingly easy. This simple recipe can be thrown together in minutes and is a delicious edition to salads year-round.
Ingredients
- 4-5 fresh strawberries
- 1/2 cup olive oil
- 1/4 cup of balsamic vinegar
- 2 Tbsp lemon juice
- salt and pepper to taste
- optional: 1 Tbsp Italian seasoning
Preparation
The easiest way to prepare this salad dressing it to just throw everything in the blender and pulse for a few seconds. I’m a bit obsessed with my Blendtec but this is a light job so any blender will work for this.
You can also make this dressing by putting everything into a canning jar, or any container that seals tightly. Before adding, mash the strawberries up a bit. Once everything is in, just shake up the container really well.
This lasts for up to a week in the fridge and is a delicious way to top some of your favorite salads.
