Mexican Stuffed Peppers
Do you need a fresh idea for dinner? Stuffed peppers are the perfect meal all wrapped up in a delicious little package. These Mexican stuffed peppers are a huge crowd pleaser and you can throw them together in under 15 minutes!
I know how busy you are. It can be overwhelming to get dinner on the table on those nights when it feels like there are a million things going on.
On those nights, stuffed peppers can be a huge sanity saver.
Don’t have the exact ingredients for this recipe? No worries! You really can’t go wrong with these. Throw in whatever you have in your fridge.
Ingredients
- 3-4 large bell peppers
- 1 cup cooked rice
- 1 cup black beans
- 1 cup corn
- 1 cup shredded chicken
- 1 jar of your favorite salsa
- Cheese, shredded
Preparation
Combine your cooked rice, black beans, corn, and chicken in a medium bowl. Mix in your salsa and about 1/2 cup of shredded cheese.
Fill your peppers with the chicken mixture and top with some extra shredded cheese.
Bake at 375° for about 35 minutes.
Serve with a side salad or just on their own as a complete meal.
