Peanut Crusted Chicken
We all have those recipes that just never get old. We keep making them over and over again because we know they’ll be a hit every single time. This Peanut Crusted Chicken recipe is just one of those recipes in my house. My kids all LOVE this and I love that it is easy to change things up by adding some extra spice or changing the seasonings I use.

My family has probably made this peanut-crusted chicken recipe hundreds of times. The chicken is so tender that even my picky eaters don’t complain and this is a favorite for most of my kids.
I love that I usually have the ingredients needed on hand so I can throw this together on those busy nights when I can’t seem to get my act together. I like to keep my weekly menu planned in advance (I use this printable menu planner) but we all know that some weeks that just doesn’t happen.
On the days when I just need to cut myself a bit of slack for dinnertime, I can throw this together in no time at all and it looks like I’ve spent way more time on it than I have.

Peanut Crusted Chicken Instructions
This recipe is so easy to make and the steps are so fun for kids so I usually have my kids jump in and help. They love when we make this recipe because they know the first step is hitting peanuts with a hammer. We like this meat mallet and have found it has a surprising number of uses in our kitchen.
Add your peanuts to a plastic bag and hit the bag with the meat mallet. Leave them with some good sized chunks so you get some great texture on your chicken.
I also like to pound the chicken out a bit to make them thinner. Cover your chicken in a piece of plastic wrap (to avoid any pieces of chicken flying around) and use the smooth side of your meat mallet to pound the chicken until it is the thickness you’d like it to be.
Lay out three bowls to create a breading station.

In the first bowl, fill it with flour, salt and pepper.
This will be the first step in breading your chicken.

In the second bowl, use two egg whites, a splash of water, and a drizzle of hot sauce (if desired).

In the third bowl, fill it with your crushed peanuts and some chopped parsley if you want.

Dredge your chicken in the flour, dip it in the egg white mixture, then press firmly into the crushed peanuts to coat each piece well.

Pan fry for about 4-5 minutes on each side on med-high heat until each side is golden brown then place in a 350° oven for 2o-25 minutes, or until the chicken is tender and the center is no longer pink.
You end up with some amazingly tender chicken that is packed with flavor.
Change things up by mixing some dry ranch mix into your flour mixture, adding your favorite herbs, or even changing the nuts you use for the breading.
