Recipe: Easy Greek Chicken
Quick pasta dishes are perfect to have up your sleeve on a busy weeknight. You can throw in just about anything you have in your fridge and you can’t get much more kid-friendly than finger sized noodles.
This easy green chicken pasta recipe is a variation of our all-time favorite homemade pizza recipe – Chicken and Feta Pizza with Pesto.
Since my kids all enjoyed the pizza form of these ingredients, it was a great way to expand their horizons and get them to eat this meal without complaining.
Ingredients
- Pasta – We used bow tie but any pasta you have on hand will do. I love whole wheat pasta but in this dish the wheat flavor overpowers the other ingredients so I’d stick with something basic.
- Pesto – You can make it. We like things easy around here so we bought it. You can get some great quality pesto at most health food stores for a fraction of what it would cost to make it yourself . . . unless you have a garden, which I don’t.)
- Broccoli
- Cooked chicken
- Pine nuts
- Feta cheese
Preparation
You don’t get much easier than this dish.
Cook the noodles according to the direction on the box. Toss with a bit of butter or oil so they don’t stick.
Throw in the broccoli pieces, cooked chicken, and pesto. Toss until the pesto covers the noodles evenly. I like pesto and could probably eat it plain so I throw in the whole jar. If you want a milder taste, add a bit at a time until you get the right balance of flavors.
Top with pine nuts and feta cheese and serve.
This is fantastic with a side salad or some toasted bread and makes great leftovers the next day.
