Recipe: Tuna Stuffed Avocado
I really struggle with lunches. Dinners I can plan for but lunches tend to be just one of those things that happens. I realize I could plan my lunches out too but I’ve tried that and I never follow through.
I find it’s easier if I keep ingredients on hand that I can use to throw together a simple and healthy lunch so that we can enjoy whatever sounds good at the time or whatever we have time for before we run out the door.
This simple stuffed avocado recipe is one that we come back to time after time. It takes almost no time to prepare and it’s packed full of nutrients and healthy fats that keep you feeling full for hours.
Ingredients
- Ripe avocado
- 1 can of tuna
- 2 Tbsp plain greek yogurt
- salt and pepper to taste
Preparation
Drain your tuna and mix it with the plain green yogurt. You can substitute mayo in here or even ranch dressing if you want. If you are feeling fancy you can add in some chopped celery and carrots for some extra color and flavor.
Slice your avocado in half and remove the pit. Fill the center with your tuna mixture and sprinkle the top with salt and pepper.
It really doesn’t get easier than that. Eat it with a spoon straight out of the avocado skin.
